They roast their fully mature highland Blue Weber agaves in traditional brick ovens and crush them with a volcanic rock tahona wheel. The mash is fermented with deep well water in wooden tanks

They roast their fully mature highland Blue Weber agaves in traditional brick ovens and crush them with a volcanic rock tahona wheel. The mash is fermented with deep well water in wooden tanks with ambient yeasts and the "bagasso" or agave fibers in the ferment. Double distilled to proof in copper pot stills with no additives. It is agave forward with some herbal notes, citrus and black pepper.
