Our dried culinary lavender is hand-harvested and slow-dried on our small Michigan farm, then packed and shipped straight to your kitchen. These are food-grade dried lavender buds — the same flowers we use in our own teas, syrups, and desserts. A little goes a long way: stir into lemonade, fold into shortbread dough, steep into a London fog, or simmer into honey. Every batch is the farm-grown lavender our family grew and dried ourselves, with nothing else added.

Not all lavender is suitable for cooking, but we grow specific Lavandula angustifolia varieties selected for their sweet, delicate flavor profile. We harvest the buds just as they begin to open, when the essential oil content is highest and the flavor is most refined. Within hours of cutting, we carefully dry the flowers to preserve their aromatic compounds and natural sweetness. The result is culinary lavender with a flavor that's floral and slightly sweet, with subtle notes of mint and rosemary—never harsh, soapy, or overwhelming.

If you've never cooked with lavender before, start with less than you think you need. Lavender is potent, and a little goes a long way. For most recipes, 1-2 teaspoons of dried buds is plenty to infuse distinctive flavor. We love adding lavender to shortbread cookies, scones, and pound cakes, where its floral notes complement butter and vanilla beautifully. It's also wonderful in homemade ice cream, honey, simple syrup, and even cocktails—try it in a lavender lemonade or French 75 for an elegant twist on classic drinks.

Beyond sweets, lavender shines in savory applications too. Add a pinch to herb rubs for lamb, chicken, or pork. Steep it in cream or broth to infuse soups and sauces with subtle complexity. Blend it into homemade herbes de Provence for an authentic French touch. Some of our favorite savory recipes include lavender-honey glazed carrots, lavender-lemon grilled chicken, and even lavender-infused olive oil for finishing roasted vegetables.

To release lavender's full flavor, grind the buds slightly using a mortar and pestle or spice grinder before adding them to recipes. For infusions, steep whole buds in hot liquid (cream, milk, honey, or simple syrup) for 10-15 minutes, then strain before using. When baking, you can usually leave the ground buds in the batter or dough—they'll soften during baking and add subtle texture along with flavor.

We grow our culinary lavender using natural, pesticide-free practices on our small Michigan farm. We never use pesticides, herbicides, or synthetic fertilizers on any of our plants, so you can feel confident using our lavender in your kitchen. Each package of culinary lavender is carefully hand-sorted to remove any stems or debris, giving you pure, ready-to-use buds.
